This is one of my favorite comfort foods, it reminds me alot of my childhood, because my mom fixed it often because we loved it. The combination of the meat and potatoes with the slight sweetness of the carrots is amazing.
When I fix this dish, I like to side it with refried beans and freshly homeade flour tortillas, it's a simple dish, outfits fit for a king.

INGREDIENTS---------------------------
1 lb. 80/20 ground beef
1/2 small diced onion
1/2 small bell pepper (diced)
1/2-3/4 C. chopped carrots
1 C. water (for molcajete)
2 small/medium size cubed potatoes
16 oz. diced tomatoes (I used my canned)
1/2 tsp peppercorns
1/2 tsp whole cumin
2 large garlic cloves
1/4 tso salt (in molcajete)
chopped cilantro (to your liking)
Water to cover your meat and potatoes (not to soupy, not to dry)
Salt to your liking

Dear Rachel, absolutely love your cooking style. As yourself I too grew up savoring the traditional Mexican cuisine, that my dearly departed grandmother, mi Mama Lola. She would get up very early in the morning and start to prep all her ingredients that she would need for what ever menu she had planed in advance. By the time that the rest of us got up the entire house was filled with the aroma of her love for cooking such beautiful and savory, mouth watering food. I love how it's such a versatile dish, you can add so many things or just make it plain. My dad would add corn and a small can of mushrooms. If I have a bunch of veggies, I'll add them: squash, celery, carrots, corn, potatoes

Looks delicious Rachel. We live in Texas near New Mexico where long green chili is a staple so I usually use that instead of bell peppers which also takes good.
