This dish looks delicious! You have quite the collection Dutch ovens! For years I just had a medium sized oval one, but I just added a big round one to my kitchen. You always inspire me to get into the kitchen. Speaking of inspiration, you inspired me today. I was watching your video on that viral feta tomato pasta and it sounded good but I didn't really want pasta; I wanted to keep it lighter today, so it morphed into a tomato and chickpea stew but with essentially the same flavors. Another word for “Ropa Vieja” is “Carne Ripiá” [Cuban here]. Also; very common mistake is to make it too tomatoe-y and with not enough punch. I’m optimistic this one is good! 👍🏼

Kenji posted a beef stew recipe where he finishes it in the oven, rather than on the stovetop. He made the observation that a surface burner delivers a constant heat input to the bottom of the pot, which can tend to heat the contents of the pot unevenly. But an oven creates a uniform temperature throughout the pot, which he felt results in more even cooking. I thought it was an interesting point, and makes sense.
